Can you have coconut milk, in addition to actual coconuts?
ReplyDeleteIf so, you can make yourself Massaman curry, like you like! With some modifications. Here's one, made with chicken:

Just cut out the tomatoes and garlic, omit the cayenne, and substitute the peanuts out for salty, roasted almonds (lightly crushed at home in a plastic bag, as you did at Chez Ball with some nuts years ago), and you should be good to go.
I like that the recipe has stomach-soothing ginger, too: maybe you could add a little bit more?
And--obviously--this'd go great with (cilantro'd?) rice.
Yes! It'll be a curry tastic life, all full of rich fatty coconut milk. Excellent suggestion!
